Frequently Asked Questions
Understanding Microgreens
What are Microgreens?
Microgreens are young, tender greens harvested at an early stage of growth. They are fresh, vibrant and versatile, making them an easy addition to everyday meals.
What is the difference between Sprouts, Microgreens, Baby greens and mature Vegetables?
Sprouts are germinated seeds harvested very early and are typically consumed whole, including the seed, root and emerging shoot. Microgreens are harvested after the young plant has developed its first leaves and are generally harvested above the growing medium, with the tender stems and leaves consumed.
Baby greens are harvested at a later stage, before full maturity, primarily for their leaves. Mature vegetables are allowed to develop to their full or commercially intended maturity.
In simple terms: Sprouts → Microgreens → Baby Greens → Mature Vegetables.
Why are microgreens considered nutritionally valuable?
Microgreens can contain concentrated amounts of vitamins, carotenoids, antioxidants and other plant compounds. The nutritional profile varies considerably by plant variety, growing conditions and harvest stage.
Research has shown that some microgreens can contain substantially higher concentrations of particular nutrients and bioactive compounds than their mature counterparts.
Are microgreens really beneficial, or are they just a health trend?
Microgreens have a genuine nutritional basis and are supported by scientific research; however, they should not be presented as a miracle food or a cure for disease. Their best role is as a nutrient-dense addition to a varied, balanced diet.
Are microgreens richer in antioxidants?
Many microgreens are good sources of antioxidant compounds. Studies have reported substantial concentrations of compounds such as vitamin C, vitamin E, vitamin K, carotenoids and polyphenols in different varieties.
The amount varies by species and growing conditions, so no single nutrient value applies to every microgreen.
How much more nutritious are microgreens compared with mature vegetables?
Microgreens can be exceptionally nutrient-dense, but there is no single multiplier that applies to all varieties. Scientific research has found that certain microgreens can contain substantially higher concentrations of specific vitamins, carotenoids, antioxidants and other bioactive compounds compared with their mature counterparts.
You may have heard the statement that microgreens can contain 4 to 40 times higher levels of certain nutrients than mature vegetables. This refers to comparisons involving particular nutrients and particular varieties, and should not be interpreted as meaning that every microgreen is 4–40 times more nutritious than its mature vegetable.
What makes microgreens particularly valuable is their nutrient density in a small, fresh serving, combined with the variety of flavors, colors and beneficial plant compounds they can add to everyday meals.
In short: Microgreens are not a replacement for mature vegetables—they are a nutrient-dense way to enrich the diet you already enjoy.
Can microgreens replace regular vegetables?
No, that is not their purpose. Microgreens and mature vegetables play complementary roles in a balanced diet. Mature vegetables provide bulk, dietary fiber and overall food volume, while microgreens can add concentrated amounts of selected nutrients and plant compounds, along with fresh flavor, color and variety.
Think of microgreens not as a replacement for your vegetables, but as a simple way to enrich the vegetables and meals you already eat.
Why Eat Microgreens?
If microgreens do not replace vegetables, why should I eat them?
Because they add something different. Microgreens are a convenient, fresh way to introduce a variety of young plant foods and selected concentrated nutrients and bioactive compounds into everyday meals.
They can complement the vegetables you already eat rather than compete with them. In simple terms: mature vegetables provide the foundation; microgreens help enrich the meal.
Do I still need regular vegetables if I eat microgreens?
Yes. Microgreens and mature vegetables play complementary roles in a balanced diet. Mature vegetables provide bulk, dietary fiber and overall food volume, while microgreens can add selected nutrients and plant compounds, along with fresh flavor, color and variety.
Why should I buy microgreens when I can buy more vegetables for the same price?
That is a fair question. If your only consideration is quantity, conventional vegetables will generally give you more food for the same amount of money.
Microgreens offer a different kind of value. Depending on the variety, they can provide concentrated amounts of selected nutrients and plant compounds in a small serving, while adding fresh flavor, color and texture.
They are not intended to compete with vegetables on price or quantity; their value lies in what they add to the diet you already have: nutrition, variety, freshness and convenience.
Why are microgreens more expensive than ordinary vegetables?
Microgreens are produced in a comparatively intensive growing cycle involving specialized non-GMO seeds, growing media, controlled cultivation, close monitoring, manual harvesting, careful handling and packaging.
Their relatively short fresh shelf life also adds to the challenge of delivering them at their best.
What makes microgreens a premium food?
Microgreens are produced in a relatively intensive growing cycle, harvested young and handled as a fresh, ready-to-eat product.
Their value comes from a combination of nutritional density in selected varieties, freshness, distinctive flavors and colors, convenience and careful cultivation—not simply from the weight of the pack.
